  • Colby Jack cheese
  • Mozzarella cheese
  • Parmesan cheese
  • 6 Tbsp Mayonnaise

  • This isn’t just grilled cheese—it’s a triple-decker cheese bomb. Five melty cheeses stacked between three slices of golden, mayo-crusted sourdough. That middle slice? It’s the glue holding this beautiful mess together. Gooey, crispy, ridiculous—in all the right ways.
  • Instructions:
  • Heat a flat top grill over medium heat. First, let’s shred about a quarter cup of each cheese variety. Then mix them together in a bowl and set aside. The next step is to take two slices of your sourdough bread and spread mayonnaise on one side of each slice. We are going to use the third slice of bread in the middle of the sandwich. This will ensure the structural integrity of the finished product. Spread mayonnaise on both sides of the third slice of bread. 
  • Lay the two outer slices of bread on the flat top, mayonnaise side down. Evenly distribute the cheese on either piece of bread.  Place the third slice of bread on the flat top and grill separately, achieving a golden brown toasty color on both sides. Assemble the components with the third slice of bread stacked in the center, creating a triple decker sandwich. Finish cooking using a cloche to achieve a perfectly melted grilled cheese. Slice diagonally and enjoy!
