Bake or air-fry tater tots according to package instructions.
Prepare the chipotle crema. Combine the mayo, crema, lime juice, chipotles and their sauce and the cilantro in a food processor. Season with a pinch of salt and process until smooth. Set aside.
Heat a flat top grill to medium high heat. Cook the breakfast sausage links until well browned and the internal temperature reaches 160 degrees fahrenheit.
Prepare the eggs by whisking them together in a medium sized bowl. Season to taste with salt and pepper. Pour the eggs on to the flat top and cook slowly, stirring gently until scrambled and soft.
Heat the tortillas on the flat top. To assemble, start with a base layer of sliced avocado seasoned with salt. Top it with scrambled eggs, cheese, sausage, tater tots, chipotle crema, hot sauce and cilantro. Wrap the burrito by folding in the sides and rolling tightly from the bottom up. Lightly toast the burrito on the flat top, seam side down for 1-2 minutes, then flip to crisp the other side. Serve and enjoy!
