Cook the bacon over medium high heat until crispy.
Combine the cheeses in a medium bowl.
Coat 8 of the bread slices with mayo on one side and the remaining 4 get mayo on both sides.
Heat a grill to medium high heat for indirect cooking. We’re going the 4 double mayo coated sides on both sides. The other 8 slices go onto the grill mayo side down. Top each with cheese mixture and divvy up the bacon between half of those slices. Once all the bread is toasty, you’ll build the sandwiches – cheesy bread, grilled bread, cheesy bread. Slice and smash!
