Grilled Pineapple with Panela Cheese

Ingredients
For the pineapple grilled cheese
- 1 pineapple peeled, core removed and cut into quarters
- 1 small red onion finely chopped
- 1 medium red jalapeno seeded and finely chopped
- 1/2 fresh cilantro leaves chopped
- 1/4 cup fresh lime juice
- Kosher salt for seasoning
- Ground black pepper for seasoning
For the grilled panela cheese
- 12 ounces queso panela cut into 1/2-inch slices
- Olive oil for grilling
Instructions
- Heat your grill to medium-high heat. Grill the pineapple directly, for 2 to 3 minutes per side. Remove from the grill to cool while you prepare the rest of the salsa. In a medium bowl, toss together the red jalapeno, red onions, cilantro, lime juice, a big pinch of salt and pepper. Chop the cooled pineapple and add to the salsa. Chill while you grill the panela.
- Coat the panela with olive oil and grill over medium heat for 3 to 4 minutes on each side until charred. We like to move the grilled cheese to a small cast iron dish thats been heated – you can do this right on the grill – to keep it warm for serving. Top with the salsa and enjoy.
