- 021 cup béchamel sauce (see below)
- 032 tablespoons potato starch
- 041 cup AP flour (for dredging)
- 052 large eggs, beaten (for dredging)
- 061 ½ cups breadcrumbs
- 07Olive oil, for frying
The Béchamel:
- 012 tablespoons unsalted butter
- 022 tablespoons all-purpose flour
- 031 ½ cups whole milk, warmed
- 04Pinch of nutmeg
- 05Kosher salt and black pepper, to taste
The Sauce
- 012 tablespoons olive oil
- 024 garlic cloves, sliced
- 031 small yellow onion, diced
- 041 teaspoon dried oregano
- 051 (28-ounce) can whole tomatoes
- 06Kosher salt, to taste
The Finish
- 011 ½ cups shredded whole-milk mozzarella cheese
- 02½ cup grated Parmesan cheese
- 03Extra-virgin olive oil, for drizzling
- 04Fresh basil leaves, fried until crisp
