Grilled Pineapple with Panela Cheese

For the pineapple grilled cheese

  • 1 pineapple, peeled, core removed and cut into quarters
  • 1 small red onion, finely chopped
  • 1 medium red jalapeno, seeded and finely chopped
  • 1/2 fresh cilantro leaves, chopped
  • 1/4 cup fresh lime juice
  • Kosher salt, for seasoning
  • Ground black pepper, for seasoning

For the grilled panela cheese

  • 12 ounces queso panela, cut into 1/2-inch slices
  • Olive oil, for grilling

Heat your grill to medium-high heat. Grill the pineapple directly, for 2 to 3 minutes per side. Remove from the grill to cool while you prepare the rest of the salsa. In a medium bowl, toss together the red jalapeno, red onions, cilantro, lime juice, a big pinch of salt and pepper. Chop the cooled pineapple and add to the salsa. Chill while you grill the panela.

 

Coat the panela with olive oil and grill over medium heat for 3 to 4 minutes on each side until charred. We like to move the grilled cheese to a small cast iron dish thats been heated – you can do this right on the grill – to keep it warm for serving. Top with the salsa and enjoy.
