If pizza was a sandwich… THIS would be it.
Instructions:
Heat a flat top grill over medium heat. Butterfly each sausage link by splitting them right down the middle lengthwise, but not all the way through. Butterflying the sausage will allow us to flip the sausage only once while on the flat top; resulting in a delectable char on each side. Place the sausage on the flat top, split side down first. Cook until the internal temperature reaches 160 degrees Fahrenheit. Chop the sausage into medium size pieces and set aside.
Next, take your sourdough bread and spread mayonnaise on one side of each slice. Lay the bread on the flat top, mayonnaise side down. Place the Mozzarella cheese on one slice of bread and Provolone on the other. Top one of the slices with the cooked Italian sausage and sandwich them together. Finish grilling using a cloche to achieve cheesy melty perfection.
The sandwich is done when the cheese is melted throughout and the bread is a crisp golden brown. Remove from the flat top, cut it in half and enjoy dipping in marinara if you wish.
